Laghi Lombardi PDO extra virgin olive oil

Article 1
Name
The protected designation of origin "Laghi Lombardi", accompanied by one of the following additional geographical indications: "Sebino", "Lario", is reserved for extra virgin olive oil corresponding to the conditions and requirements established in this production specification.

Article 2
Variety of olive trees
1. The protected designation of origin "Laghi Lombardi", accompanied by the geographic mention "Sebino" is reserved for extra virgin olive oil obtained from the following varieties of olive trees present in the olive groves: Leccino in a measure of not less than 40%; Frantoio, Casaliva, Pendolino eSbresa, alone or together, in an amount not exceeding 60%. Other varieties present in the olive groves may also contribute in an amount not exceeding 20%.
2. The protected designation of origin "Laghi Lombardi", accompanied by the additional geographic mention "Lario", is reserved for extra virgin olive oil obtained from the following varieties of olive trees present, alone or jointly, in the olive groves: Frantoio, Casaliva and Leccino inmisura non less than 80%. Other varieties present in the olive groves may also contribute in a measure not exceeding 20%.

1. Article 4
Cultivation characteristics
1. The environmental and cultivation conditions of the olive groves intended for the production of extra virgin olive oil pursuant to art. 1 must be the traditional ones and characteristics of the area and, in any case, suitable for giving the olives and derived oil the specific quality characteristics.
2. The planting layouts, the forms of training and the pruning systems must be traditionally used or, in any case, capable of not changing the characteristics of the olives and of the olidestinate to the protected designation of origin referred to in art. 1.
3. The hilly and pedo hilly olive groves of the area indicated in the previous art. 3 The soils are substantially derived from the natural or mechanical induced chemical-physical disintegration of limestones of different composition and structure and from the slow sedimentation of the more minute non-homogeneous materials, separated by smoothing and flotation and transported downstream into the open spaces of the moraine circles. The surface layer of these soils has given rise to red, brown or gray soils, with an abundant and varied skeleton in the morainic areas and with more or less profound pedological horizons.
4. The collection of olives intended for the production of extra virgin olive oil with denomination of origin referred to in art. i must be made by January 15 of each year.
5. The maximum production of olives from olive groves intended for the production of extra virgin olive oil with a protected designation of origin pursuant to art. 1 cannot exceed Kg. 5000 per hectare for intensive plants. The maximum yield of the olives in oil cannot exceed 19%. Even in exceptionally favorable years, the yield must be brought back to the above limits through careful sorting provided that the overall production does not exceed the maximum limits indicated above by more than 20%.
6. The production report of the olives must be submitted according to the procedures established by the Ministerial Decree November 4, 1993, n. 573, in a single solution.
7. Upon submitting the olive production report and the request for product suitability certification, the applicant must attach the certification issued by the olive producers' associations pursuant to art. 5, point 2 letter a), of the law 5 February 1992, n. 169, proving that the production and transformation of the olives took place in the area delimited by the production disciplinary.

Article 5
Oleification method
1. The oleification area of ​​extra virgin olive oil with protected designation of origin "Lombard Lakes", accompanied by the geographical mention "Sebino", includes the administrative inter-territory of the municipalities indicated in point 2 of art. 3.
2. The oleification area of ​​the extra virgin olive oil with protected designation of origin "Lombard Lakes", accompanied by the geographical mention "Lario", includes the entire administrative territory of the municipalities indicated in point 3 of art. 3.
3. 1 must take place directly from the plant by hand or by mechanical means.
4. Oleification operations must be carried out within three days of the olive harvesting5. For the extraction of extra virgin olive oil referred to in art. 1 only mechanical and physical processes are allowed to ensure the obtaining of oils without any alteration of the quality characteristics contained in the fruit.

Article 6
Consumer characteristics
1. Upon release for consumption, extra virgin olive oil with a protected designation of origin "Lombard Lakes", accompanied by the geographical mention "Sebino", must meet the following characteristics:
color: green-yellow,
smell: medium-light fruity;
flavor: fruity with a slight bitter and spicy sensation;
Panel test score: = 7.00
maximum total acidity expressed in oleic acid, by weight, not exceeding 0.55 grams per 100 grams of oil;
peroxides number: = 12 MeqO2 / Kg.
oleic acid: = 76%
K 232: = 2.00
2. Upon release for consumption, extra virgin olive oil with a protected designation of origin "Lombardi Lakes", accompanied by the geographical mention "Lario", must meet the following characteristics
color: green-yellow;
smell: light fruity;
flavor: light fruity with the possible presence of a slight bitter and spicy sensation;
Panel test score: = 7.0
maximum total acidity expressed in oleic acid, by weight, not exceeding 0.50 grams per 100grams of oil;
peroxides number: = 12 MeqO2 / Kg.
oleic acid: = 76%
3) Other parameters not expressly mentioned must comply with the current U.E.
4) In each oil campaign, the Protection Consortium identifies and maintains an ideal number of representative samples of the oils referred to in art. 1 to be used as a reference standard for the organoleptic examination.
5) It is the faculty of the Minister of Agricultural, Food and Forestry Resources to amend the analytical limits indicated above by request of the protection consortium.
6) The designation of the oils at the packaging stage must only be carried out following the completion of the procedure set out in the Ministerial Decree 573, in order to the physical and organoleptic exams.

Article 7
Designation and presentation
1. The protected designation of origin referred to in art. 1 the addition of any qualification not expressly provided for in this production specification is prohibited, including the objectives: "fine", "chosen", "selected", "superior".
2. The truthful use of names, company names, private brands is allowed provided they have no legal significance or are not such as to mislead the consumer.
3. The use of company names, estates, farms and their territorial location, as well as the reference to packaging in the olive farm or in the association of olive farms or in the olive farm located in the production area is allowed only if the product is was obtained exclusively with olives harvested in the olive groves that are part of the company and if the oiling and packaging took place on the company itself.
4. The operations of packaging of extra virgin olive oil with protected designation of origin pursuant to art. i must take place within the geographical area defined in point 1 of art. 3.
5. The additional geographical mentions, authorized by art. 1 of this specification, must be reported with a size not exceeding that of the characters with which the designation of protected origin "Laghi Lombardi" is indicated.
6. The use of other geographical indications permitted pursuant to art. 1, point 2 of the Ministerial Decree November 4, 1993, n. 573, referring to municipalities, hamlets, estates, farms from which the oil actually derives, must be reported in characters not exceeding half of those used for the designation of the protected designation of origin referred to in art. 1.
7. The name of the protected designation of origin referred to in art. 1 must appear on the label with clear and indelible characters with a wide contrast colorimetry with respect to the color of the label and
such that it can be clearly distinguished from the complex of indications that appear on it.
The designation must also comply with the labeling rules established by current legislation.
8. The extra virgin olive oil with protected designation of origin referred to in art. 1 must be released for consumption in glass or tinplate containers with a capacity not exceeding 5 liters.
9. It is mandatory to indicate on the label the year of production of the olives from which the oil is obtained.
